Shalon Hastings is a businesswoman in Helena and the owner of Taco Del Sol, and she is working on a business plan for a new specialty market and deli unlike anything currently available in the Queen City.
She plans to call it Shalon's Kitchen and hopes to open it up in the downtown area.
It will be one part market with special ingredients, fresh cheeses and cured meats; and a deli with specialty sandwiches and a soup bar, all with an emphasis on ethnic foods.
Hastings noted, "No one in town, or even in the state of Montana now, are carrying some of these products that I'm always searching for and have actually in my pantry. I do road trips to California and end up purchasing some of that stuff and driving it back and you know, it could be curry leaves for Indian cooking...there is a specific flavor there that without it, the dish is fine, but with it, it just send it over the top."
Shalon is looking for input from the public and what they'd be interested in.
The next step is to get financial backing and if all goes well, Shalon's Kitchen could be opening up in the next 8 to 12 months.
